Cotton or silken — which one is for you?
- Cotton tofu (firm-set) holds its shape under heat: bhurji, stir-fries, grilling, curries. If you are replacing paneer, start here.
- Silken tofu (soft-set) is custard-smooth: smoothies, mapo-style gravies, desserts, high-protein raita.

Refrigerated in water, about 4–5 days. Change the water daily for best texture.
